Make Ahead Gravy
Traditional gravy is arguably the most important side served on Thanksgiving. It is also the most stressful. Gravy hogs the stove and requires constant supervision in the final moments when dishes need to stay warm and be plated at the same time. Your guests are hungry and possibly hovering in the kitchen. The gravy may be too thin, or lumpy, the roasting pan may be smoking hot or not hot enough on the stovetop, there is not enough drippings to make the volume you need or the gravy is far too salty from the brine needed to infuse the bird with flavor. This make ahead gravy is not a short cut but a rich flavorful gravy for those that would rather spend the days ahead of Thanksgiving prepping for a more relaxed holiday spent with family and friends.
