Traditional Potato Salad

Intro
This traditional potato salad will be the hit of the BBQ. This brightly flavored potato salad pairs well with whatever is cooking on the grill.

Ingredients

3 Lbs Yukon or Russet potatoes, cut into 1/2-1 inch squares

1 1/3 cup mayonnaise

3 Tbsp yellow mustard

1/4 cup dill pickles, minced

1/2 of a red onion, chopped

5 hard boiled eggs, chopped

1/2 cup celery, chopped

1 Tbsp Mediterranean or Grilled potato salad seasoning

Salt and pepper to taste

Directions
  1. Boil potatoes for 15-20 minutes until fork tender. Drain and set aside to cool while you make the dressing.
  2. In a large bowl add the mayonnaise, mustard, diced pickles, red onion, and mix until combined.
  3. Add the boiled potatoes, chopped hard boiled eggs, and celery, and mix until everything is coated in dressing.
  4. Season with Mediterranean or Grilled potatoes Salad seasoning, and salt and pepper to taste, and mix one last time.
  5. Cover with plastic wrap and refrigerate for at least 2 hours before serving. Enjoy!
