Sautéed Mushrooms

Mushrooms offer an unmatched earthy umami flavor. The key to this extraordinary side dish is a combination of fats, in this case butter and olive oil, along with dried aromatics. Mushrooms have never been so good.

Ingredients

2 tablespoons butter

2 tablespoons olive oil

2 pounds mushrooms, I like a combination of shiitake, oyster and cremini

2 tablespoons Sautéed Mushroom Seasoning

1/4 cup dry Sherry or vegetable stock

Salt and pepper to taste

Directions

1. In a large sauté pan over medium heat, add the butter and oil. Once the butter is melted, stir in the mushrooms and Sautéed Mushroom Seasoning. Sauté for 10 minutes, allowing the mushrooms to lightly brown.

2. Pour in the sherry and reduce heat to medium-low. Sauté for 8 minutes or until most of the liquid is absorbed. Season to taste with salt and pepper.
