Tuscan One Pan Farro

Intro
There are two great things about this recipe. 1. This recipe is so healthy but tastes as if it is a cheat day meal, and 2. It is truly a one pan meal – so easy to make and to clean up. .

Ingredients
1 cup semi-pearled or whole farro
2 cups water
2 tablespoons Tuscan Seasoning
12 ounces grape or cherry tomatoes
1/2 large onion
2 garlic cloves
1 tablespoon olive oil
1/2 cup basil, julienned
1 cup Parmesan cheese, grated
Directions
1. In a medium saucepan add the farro and water. Let soak.
2. Meanwhile, halve the tomatoes, dice the onions, and mince the garlic. Add them to the saucepan with the farro.
3. Stir in the Tuscan, salt, and olive oil to the pan.
4. Bring the pot to a boil, then simmer uncovered for 30 minutes, stirring occasionally.
5. Serve warm with basil and Parmesan.
