Broccoli Cheddar Soup

Ingredients

1/4 cup melted butter

1/2 chopped onion

1/4 cup flour

2 cups half-and-half cream

2 cups chicken broth

1/2 lb broccoli, (about 3 cups), chopped into bite size pieces

1 cup carrot, matchstick cut

Dash of salt

1 Tbs Chefs Grind Black Pepper

1.5 Tbs Herb Brown Butter Mashed Potato Seasoning

8 ounces grated sharp cheddar cheese, (2 cups)

Directions
  1. Add butter and onion to a large pot and sautee onions until soft. Once soft, add the flour and cook for 1-3 mins, stirring constantly.
  2. Add chicken broth and mix until there are no clumps.  Once smooth, mix in the half and half.
  3. Add the broccoli and carrots and cook until tender, about 20-25 mins.
  4. Add salt, Chefs Grind Black Pepper, and Herb Brown Butter Mashed Potato Seasoning, mix. Lastly add cheese and mix again until combined.
  5. Serve warm and enjoy!

I like to serve my soup with some fresh bread for dunking
