Tomatoes Provençal
Intro
Ingredients
6 ripe tomatoes, about 3 inches in diameter
1 1/2 cups bread crumbs, preferably freshly cut
2 shallots, minced
1/4 cup basil, roughly chopped
2 garlic cloves, minced
1 1/2 teaspoons salt, divided
1 1/2 teaspoons black pepper, divided
2 tablespoons Herbes de Provence Seasoning
1/2 cup parmesan cheese, grated
2 teaspoons olive oil
Directions
1. Preheat oven to 400°F.
2. Cut the tomatoes in half crosswise. Remove and discard the seeds and juice. Arrange the tomato halves in a baking 9x9 dish. Season the tomatoes with 1 teaspoon each salt and pepper.
3. In a mixing bowl combine the bread crumbs, shallots, basil, garlic, the remaining 1/2 teaspoon salt and the Herbes de Provence.
4. Fill the tomatoes with the bread crumb mixture. Bake uncovered for 15 minutes, or until they're tender.
5. Sprinkle with cheese, drizzle with olive oil, and bake for 5 additional minutes. Serve hot or at room temperature.
