Smoky Corn Salad

I love to serve this salad with tacos. It is crunchy, and offers a sweet-n-smoky flavor.
Smoky summer corn salad.

Ingredients

10 ears of corn

Juice of 2 limes

4 tablespoons olive oil

2 tablespoons Smoky Paprika Chipotle Seasoning

1 red bell pepper, seeded and cut into 1/4 inch dice

1 orange bell pepper, seeded and cut into 1/4 inch dice

1 bunch scallions, thinly sliced

1 cup snow peas, cut into 1/4 inch pieces

1/2 cup cilantro, roughly chopped

Directions

1. Cook corn using your preferred method (steam, boil, grill). Remove corn kernels from the cobs and let cool.

2. In a small bowl whisk together the lime juice, olive oil, and Smoky Paprika Chipotle Seasoning. Set aside.

3. In a large bowl combine the corn, bell peppers, scallions, snow peas, and cilantro. Add the Smoky Paprika Chipotle vinaigrette, toss to coat. Season with salt and pepper to taste.
