Ingredients

1 pound of mini potatoes

1 ½ chopped onions

1 ½ pound of tri tip steak

3 tablespoons of Coffee Chili Rub

1 cup of beef stock

Directions
  1. Place mini potatoes and chopped onions in the bottom of the slow cooker, spreading them evenly.
  2. Generously coat the steak with coffee chili rub on both sides for a rich flavor, then lay the seasoned steak over the vegetables, ensuring it covers them well.
  3. Pour the beef stock over the top to enhance the taste and keep everything moist.
  4. Cover with the lid and set the slow cooker to high for 4 hours or low for 8 hours, allowing the flavors to meld.
  5. Once cooked, carefully remove the steak and slice it.
  6. Serve the steak with the tender potatoes and onions, savoring the blend of spices and juices.
