Ingredients
1 pound of mini potatoes
1 ½ chopped onions
1 ½ pound of tri tip steak
3 tablespoons of Coffee Chili Rub
1 cup of beef stock
Directions
- Place mini potatoes and chopped onions in the bottom of the slow cooker, spreading them evenly.
- Generously coat the steak with coffee chili rub on both sides for a rich flavor, then lay the seasoned steak over the vegetables, ensuring it covers them well.
- Pour the beef stock over the top to enhance the taste and keep everything moist.
- Cover with the lid and set the slow cooker to high for 4 hours or low for 8 hours, allowing the flavors to meld.
- Once cooked, carefully remove the steak and slice it.
- Serve the steak with the tender potatoes and onions, savoring the blend of spices and juices.
