This combination has been created with just the right balance to allow the salt and pepper to flow together freely, with no settling or clumping. It truly shines when applied to brisket, giving an even coat of both the salt and pepper.

Directions
1. Trim excess fat as needed from an untrimmed brisket.
2. Coat all sides with Sea Salt & Butcher's Pepper.
3. Cook for 5 hours at 275° F and pull from the heat. Wrap the brisket tightly in foil and/or peach paper.
4. Turn the heat up to 350°F and cook for an additional 3 hours, or until the brisket reaches an internal temp of 195°F.
5. Rest for an hour. Cut slices against the grain.
