New England Lobster Roll

Intro
After traveling all over New England in pursuit of the perfect lobster roll, our social/digital coordinator Megan decided to create her own recipe. With all the mouthwatering elements of a classic New England lobster (lobstah) roll, featuring a zesty VG twist, this is summer staple.

Ingredients
1/3 cup mayonnaise
1/4 cup celery leaves, roughly chopped
1/4 cup scallions, chopped
Juice of 1/2 lemon
1 teaspoon Zesty Lemon Herb
3 lbs lobster meat (roughly 6 chicken lobsters)
7 tablespoons unsalted butter, melted, divided
4 brioche buns
Directions
1. In a small bowl whisk the mayonnaise, celery, scallions, lemon juice and the Zesty Lemon Herb seasoning.
2. Add the lobster meat to the bowl and toss to coat. At this point you can chill for 3-4 hours before serving.
3. Heat a grill pan or skillet to medium heat. Brush the inside of the buns with the melted butter. Toast until golden, about 5 minutes.
4. Divide the lobster salad among the buns and enjoy!
