Fattoush Salad

My fattoush salad is made with fresh vegetables, crispy toasted pita chips, and a bright Za'atar vinaigrette.

Ingredients

2 loaves of lebanese flatbread or naan

1 cucumber, quartered lengthwise and sliced thin

2 cups lettuce, chopped

1 pint tomatoes, sliced

1/2 cup parsley, chopped

1 lemon, juiced

Salt and pepper to taste

1 tablespoon Za'atar Seasoning

3 tablespoons extra virgin olive oil

Directions

1. Preheat oven to 350°F.

2. Place the bread directly on the oven rack and bake for 5-10 minutes or until crisp.

3. In a large a bowl combine the cucumber, lettuce, tomatoes, and parsley.

4. In a small bowl whisk together lemon juice, salt and pepper, and Za’atar. While whisking slowly drizzle in the olive oil. Drizzle over the lettuce mixture, tossing to coat.

5. Tear bread into bite size pieces, add to salad and toss. Serve immediately.

Try my Za'atar flatbread in lieu of the naan bread.
