Oven Baked White Fish

Intro
This is a quintessential New England recipe. There is nothing like buttery Ritz crackers infused with Seafood seasoning and fresh lemon.
Crispy fish in a cast iron skillet.

Ingredients

4 tablespoons Seafood Seasoning

1/2 ritz cracker crumbs or panko breadcrumbs

4 tablespoons mayonnaise, optional

4- 6 ounce cod, haddock or tilapia

2 teaspoons butter

1 lemon cut into wedges

Directions

1. Preheat oven to 350ºF. Line a rimmed baking sheet with aluminum foil. Set aside.

2. Combine the Seafood Seasoning with breadcrumbs in a bowl and mix well.

3. If using, spread 1 tablespoon mayonnaise on each fillet. Dredge each the fillets with the breadcrumb mixture. Arrange on the prepared pan.

4. Top each fillet with 1/2 teaspoon butter. Bake for 12-15 minutes or until the fillets are golden brown. Serve with lemon wedges.
