Intro
OK every soup is my favorite. But this is really my number one favorite. I adore this soup. I eat it with loads of warm buttered crusty bread.
Minestrone and warm crusty bread.

Ingredients

4 tablespoons Sicilian Seasoning

4 slices bacon, cut into 1 inch pieces

1 large onion, chopped

4 cloves garlic, minced

1/2 pound ground meat (beef, turkey, chicken or plant protein)

4 medium carrots, diced

1 - 16 oz can tomato sauce

1 - 28 oz can diced tomatoes

4 cups broth (beef, chicken or vegetable)

4 cups water

1/2 cup red wine

3 medium zucchini, diced

2 cups fresh spinach, chopped

1 cup pasta

1 - 15 oz can garbanzo beans, drained and rinsed

1- 15 oz can cannellini beans, drained and rinsed

Garnish: chopped parsley and grated Parmesan

Directions

1. In a stock pot over medium-high heat cook the bacon for 5 minutes. Stir in the onion, garlic, and ground meat. Cook until browned, about 10 minutes.

2. Add in the carrots, tomato sauce, diced tomatoes, broth, water, wine and Sicilian seasoning; bring to a simmer. Reduce heat and simmer for 30 minutes.

3. Stir in the zucchini, spinach, pasta, beans and more water if desired. Simmer for 15 minutes or until pasta is al dente.

4. Serve hot with garnishes.

Substitutions
Recipe Tip:
To make this soup vegetarian, omit the bacon.
