Asian Coleslaw

Intro
I made many early versions of this coleslaw and in one of my final tests, I added spinach. This salad is refreshing, healthy and delicious- perfect for a a summer side dish.

Ingredients

1 medium head of Savoy cabbage, quartered and sliced very thinly

2 cups carrots, shredded

2 cups fresh spinach leaves, shredded

2 tablespoons olive oil

1/2 cup rice wine vinegar

1/4 cup mayonnaise

2 tablespoons soy sauce

1 1/2 tablespoons sugar

2 tablespoons Toasted Sesame Ginger

Directions

1. In a large mixing bowl combine the cabbage, carrots, and spinach.

2. In a small bow whisk together the oil, vinegar, mayonnaise, soy sauce, sugar and Toasted Sesame Ginger seasoning.

3. Add the dressing to the cabbage mixture. Toss well.

4. Chill at least 30 minutes, serve cold.

Substitutions
Recipe Tip:
I like to mix in fried wontons for texture. Add these just before serving.
