Apple Pie Spiced Sugar Cookies
Intro
Ingredients
2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 pound (2 sticks) unsalted butter, softened but still firm
1 1/4 cup granulated sugar, divided
1 large egg, room temperature
2 teaspoons vanilla extract
1 1/2 tablespoons Apple Pie Spice
Directions
1. Preheat oven to 375°F. Line two cookie sheets with parchment or silicone baking mats. Set aside.
2. In a medium bowl whisk together flour, baking powder, and salt. Set aside.
3. In the bowl of a stand mixer fitted with a paddle attachment (or with a hand mixer), cream the butter and 1 cup of sugar until light and fluffy, about 3 minutes. Scrape sides of bowl with rubber spatula.
4. Add in the egg, vanilla, and 1 tablespoon of Apple Pie Spice. Beat until combined, about 30 seconds.
5. Then add in flour and salt and beat at low speed until just combined, about 30 seconds.
6. Place remaining 1/4 cup of sugar and 1/2 tablespoon of Apple Pie Spice in a shallow bowl. Stir to combine.
7. Form dough into 1 1/2 tablespoons balls, then roll in the sugar mixture; place on prepared pan, spaced 2 to 2 1/2 inches apart.
8. Dip the bottom of a measuring cup or drinking glass in water and press the dough until flattened to 1/2 inch thick.
9. Bake, reversing the position of cookie sheets half way through baking time, until edges of cookies are golden, about 10 to 14 minutes. Let cookies cool for 2 to 3 minutes before transferring to a cooling rack.
10. Store in an airtight container for 3 days or freeze for up to 3 months.
